I do not really have much time to enjoy the summer.  Most of the time I am working, and the rest of the time it is usually raining... ok, ok I get a few nice days off here and there but not as many as I would like.  If I could, I would spend the entire summer at the beach.  I would rotate swimwear and my main worry would be what flavor slush to choose, if only life were that simple.  I should not be complaining, I love my job and most of the time I am there more than I need to be but when the summer rolls around I would kill to wake up and have nowhere to be & nothing to do.  

End rant. 

On to the outfit - stripes, an olive vest, and lace up sandals 
1. I can get away with this outfit at work (with a little added attention to my hair)
2. This dress may double as a nighty (it is so soft)
3. These sandals were around $20 and I am all for a good bargain (and anything blush)

 
  now go enjoy a slush, or an ice cream...

Kay's Kitchen : Egg Scramble

Im back to pretending I can cook...  I mean I can cook, just not as well as I would like.  I am trying to eat better.  By trying I mean I will eat well all day and then treat myself to an ice-cream every night - but that is another thing I will work on.  I love breakfast, it is easily the best meal of the day simply because I wake up so hungry.  I am not the best at eating breakfast everyday but when I do I try to make it as filling as possible.  I love eggs and make sure that I add some extra veggies to increase the nutritions.  This egg scramble is the easiest because it is quick, thoughtless, and works with whatever you like.  


ingredients: (you can add anything you would like)
3/4 eggs - depending on how hungry you are
peppers - or another veggie (mushrooms, spinach, eggplant)
cheese - the shredded cheese works the best but again, use what you prefer


Step one: place as many eggs as you would like in a bowl and beat them until the yolk and white is combined (i usually only add one yolk because they are high in cholesterol) cook the eggs until they are no longer runny.
Step two: add veggies of your choice and make sure to lower the temterature so that your eggs don't burn.  Simmer the eggs and veggies until fully cooked. 
Step three: add cheese of your liking and  cover until the cheese fully melts.

The beginning of June is always so amazing.  The weather warms up, school ends (for most), and then beach dose not seem so far away.  A perfect June would include the ending of school work, beach days, barbecues, outdoor exploration, and a lot of reuniting with friend.  Sadly I work a full time job so my fun is limited to about one day a week (and usually it rains on that day) but I make the most of the free time that I do get!

Mystic Magic

This past weekend off called for a bit of exploration.  After a relaxing day in Providence we decided to take a day trip to Mystic, Connecticut.  While on the way we brainstormed things to do: visit the aquarium, play mini golf, or sightsee.  It was a beautiful day and just happened to be Mystics' "Taste of Mystic", a food festival.  Being a lover of food I was too excited to taste Mystic!
 We snacked on lobster mac and cheese (pictured above), jerk chicken, and Del's Lemonade.  Relaxing by the water was nice.  Mystic was the perfect example of a quaint town, nothing like our usual city lifestyle, it was nice to take in the fresh air and enjoy the weekend off.

I was also excited to explore new places for photos.
